After Germain's flight, we'd like to introduce Julien Valero, our executive chef.

A native of the South of France, Julien developed a taste for cooking at a very early age, starting to cook alongside his grandmother at the age of 8.
A few years later, after an initial experience in Monaco which confirmed his taste for the profession, Julien took his first steps in the kitchen at the Paul Valéry school in Menton, at the same time as working in the kitchens of the Le Méridien hotel. Thanks to the experience he has acquired in leading French establishments such as Guy Savoy in Paris, Stay by Yannick Alleno, the George V and the Ritz as sous-chef de cuisine, Julien has now joined us to put all his know-how at the service of our Michelin-starred table.
