The collaboration between our Director of Sommellerie Bastien Debono and Yoann Conte is a true osmosis. Together, they create a taste experience where wine and gastronomy respond to each other to perfection. More than just an accompaniment, wine is an essential partner in the elaboration of each dish, playing a central role in the way our dishes are imagined and savored. Bastien Debono carefully selects exceptional wines, whose characteristics enhance each ingredient. Sometimes, it's the wine itself that inspires the dish, revealing a unique approach where the harmony of flavors takes precedence. This reverse approach to classic pairing offers our customers a new dimension in the art of tasting, where each bite and sip responds to, complements and elevates the other. The perfect marriage of flavors is the fruit of meticulous work, based on listening and exchange. Together, they push back the frontiers of cuisine by creating original combinations, while respecting the local produce and the identity of each wine. Balance is fragile but essential in our gourmet restaurant, and it's in this quest for perfection that the magic of our house lies.
